I’m so in love with this veg pasta dish that I’ve bought the ingredients to do it again this week.
- It’s ridiculously easy to make
- Super flipping cheap
- It’s totally meat free which i think Is a good thing now and then even for a meat lover like myself
- Super healthy cos of all the veg
- My kids absolutely loved it!!
I used Anabel Karmels recipe as a base, but here are my amendments.
1 tbsp olive oil
1 leek, finely chopped
1 garlic clove, crushed
1/2 red pepper
1 medium carrot, peeled & chopped
1 medium courgette, chopped
400 g tin chopped tomatoes
150 ml chicken stock
1 sachet tomato puree
1 tbsp tomato ketchup
1 tsp xylitol
I was running late the day I made it, so while I was frying the leeks I cooked the veg in the micro so I could speed up the process. Then I popped everything in the pot with the canned tomatoes and stock and let it boil while I did the pasta.
Then I blitzed the sauce added grated cheese on top and voila!!
